Glycine is the simplest structure of the 20 members of the amino acid series, also known as aminoacetic acid, is a non-essential amino acid for the human body, has both acidic and basic functional groups in the molecule, is a strong electrolyte in aqueous solution, has a large solubility in a strong polar solvent, is basically insoluble in non-polar solvents, and has a high boiling point and melting point, through the adjustment of acidity and alkalinity of aqueous solutions can make glycine present different molecular forms. The side bond of glycine is a hydrogen atom. Since it α carbon also has a hydrogen atom, glycine is not ecmeric in optical rotation. Because glycine has very small side bonds, it can occupy space that other amino acids cannot occupy, such as amino acids in the collagen helix. At room temperature, it is white crystal or light yellow crystalline powder. It has a unique sweetness, which can soften the acidic and alkaline taste, mask the bitter taste of added saccharin in food and enhance the sweetness.
