Folic acid is named for being first extracted from spinach leaves, which has the effect of promoting the maturation of young cells in the bone marrow, and if humans lack folic acid, it can cause macrocytic anemia and leukopenia. Folic acid is a dark yellow substance, not easily soluble in water, its sodium salt solubility is large. It is thermally stable in neutral and alkaline solutions, and decomposes in acidic solutions at temperatures above 100 °C. Folic acid and its sodium salts are destroyed by light in solution.
